Crispy Noodle Salad

With leftover cabbage in the fridge, I thought, why not create something exciting with it? Cabbage isn't something we have often, but the health benefits are phenomenal! It's low in carbohydrates, rich in dietary fiber, and an excellent source of nutrients. While it might not be the tastiest vegetable at first glance, we can always make creative choices and transformations to make things both delicious and healthy at the same time. Crispy noodles are another favorite, but we can't have too much due to their high carb content. Remember, everything in moderation, people!



Ingredients


1/2 cabbage (shredded )

1 x punnet cherry tomatoes

1 x packet crispy noodles

1/4 cup soy sauce

1/4 cup sesame oil

1/4 cup vegetable oil

1/4 cup balsamic vinegar

Salt and Pepper to taste


Method


  1. Chop up cabbage so its almost to be shredded (you could also just shred it!)

  2. cut cherry tomatoes into halves or quarters

  3. Add soy sauce, sesame oil, vegetable oil and balsamic vinegar to a jar and shake shake shake!

  4. All everything to together in a bowl and mix well!

  5. Serve up with your other favorite diabetes friendly foods!!


This time we had an absolute blast enjoying this side salad with some delicious corned beef silverside (another one of our favorites from a previous episode!). And, as always, we indulged in plenty of other veggies, steamed to perfection just the way the kids love it!

Absolutely delicious and a fantastic way to enjoy cabbage if you're up for trying something new! With the sesame oil, I was totally getting those 'Asian style' vibes, and this dish definitely satisfied my craving for it.
