Stuffed Mushrooms (lower carb style)
Mushrooms are an extraordinary vegetable with low carbohydrate content and a low glycemic index. However, we frequently consume them in uninspiring ways. Although they are delicious, it's time to explore and try something new and exciting! Chicken Stir Fry with Noodles
Stir Fry - the culinary adventure I've skillfully dodged for years. But now, it's been gently hinted that I should dive into the wok of wonders, diabetes edition! To satisfy my curiosity and needs, I eagerly explored diabetes-friendly noodle options and discovered an exciting Japanese choice—Shirataki noodles made from the Konjac root, native to East Asia! These noodles are a fantastic fit for a diabetes-friendly diet, boasting low carbs and low calories. While choices always

Basic Chicken Rice and Quinoa
I've talked about this a lot before, but I can't help but get excited about quinoa as an amazing option for meals and cooking! On a recent trip to Woolworths, while browsing for rice, I discovered a fantastic product that fits perfectly with my diabetes-friendly meal planning: brown rice and quinoa! Both are fantastic choices for anyone mindful of diabetes and healthy eating. I usually whip up a 'dirty rice' or 'dirty quinoa' for the family using mince (check out my previous

Post Metallica Eats!
Gimme fuel, gimme fire, gimme that which I desire! (Diabetes-appropriate foods which positively keep blood glucose levels at bay - yes, please!) As previously mentioned and executed, the slow-cooked sausages, accompanied by the avocado and bean salad, were consumed the evening following the Metallica concert. This meal positively influenced glucose levels overnight, as evidenced here. I have consistently maintained that minor decisions can yield significant effects, and this

Pre Metallica Eats! (Avocado and Bean Salad)
Just back from holidays and eager to dive back into those healthy routines... and then Metallica is rocking out in your hometown! What do you do??? Well, we always aim to give it our all; but hey, sometimes plans change. So, for our pre-Metallica dinner, the plan was to enjoy some slow-cooked sausages (check out our previous blog for the recipe!) paired with a delicious avocado and bean salad—thanks to our newfound love for beans and their amazing benefits. But with all the p

Tasty Chicken 'Burrito' Bowl
Reflecting on the holidays, it's clear that countless factors impact diabetes management, and while maintaining stable blood glucose is tricky even on good days, being on vacation (and out of routine!) adds a difficult twist! During our time away, I was buzzing with ideas for new and healthier meals that everyone in the family would love. Feeding (and delighting) a family of six is no small feat, but it's a thrilling challenge! Dr. Peh's words at my husband's diagnosis always

Post Holiday Eats!
We've just returned from an incredible 3-week adventure, and wow, managing glucose levels was quite the challenge for so many reasons! Our routine went out the window, we indulged in plenty of tempting treats, and we suspect there might have been a bad batch of NovoRapid in the mix! At one point, our 'time in range' for the last week was just 22%, according to the app! Definitely not the goal with a diabetes diagnosis. As we've discussed in previous blogs, we always strive to

Holiday Eats!
Eating healthily on holidays is definitely a challenge however always thinking about the best choices is the way to go ! Sure we can splurge every now and then , even daily however for dinner we try to do the best we can most of the time . This evening we did a BBQ with plenty of veggies to fill up the plate . Easy and breezy! As you can see lots and lots of veg! Despite the peas corn and carrots being the frozen kind - it’s still veg! As you can see the porterhouse steak has

Throw Together!
So we are in holidays in Tasmania ( we live in South Australia) and it’s definitely been tricky to manage the glucose levels ! Last night we went out for dinner for a special family occasion and levels spiked above 20. This is NOT something we like to happen often so tonight , it’s a throw together of left overs with veggies added. As you can see this throw together of a meal while staying in a caravan park is filled with carbs yet also veggies and a little fish . The lasagn
