Roasted Spiced Plums! (diabetes styles )

Years ago, an exciting dessert adventure began when my parents, blessed with a plum tree, gifted us a bountiful supply of plums! I was thrilled and thought, how can I create something delicious while being mindful of diabetes? So, I dove into cookbooks and scoured the internet for a diabetes-friendly plum dessert that was simple to make and delightful for the whole family! With kids, it's always a gamble, but this dish turned out to be a definite winner!


Can you believe using sour cream in a dessert? At first, I didn't think it was worth raving about to friends, but I was so wrong! Sour cream is an amazing choice because of its low carb content and its versatility in creating sweet culinary masterpieces. Of course, portion control and mindful consumption are key. The magic lies in its fermentation process and its carb content of just about 1g per tablespoon! This means it helps maintain steady blood glucose levels with a slow rise, rather than a sharp spike. Its favorable fat content also slows digestion. Unlike other dairy products, sour cream is mostly fat and protein, positively impacting glycemic control. A 2024 study showed that protein and fat-rich meals are better for glycemic control compared to carbohydrate-rich foods. Sour cream fits these findings perfectly! And don't forget the plums... When it comes to diabetes, just like in everyday life, it's important to pay attention to what we eat. This dish is a total win for both taste and health!


Ingredients

6-10 plums (halved)

1 cup sour cream

1 tablespoon brown sugar

1/2 cup apple juice

2 Tablespoons Cardamom

2 Tablespoons Cinnamon

2 Tablespoons Nutmeg

2 Tablespoons Cumin


Method

  1. Place plums in a baking dish

  2. Combine 1/2 tablespoon sugar, juice, and spices in a bowl and stir

  3. Add to plums

  4. Place in oven at 200 degrees Celsius

  5. Bake for roughly 20 minutes. Remove from oven to cool slightly

  6. Combine remaining 1/2 tablespoon sugar with sour cream and stir together to lightly mix

  7. Place sour cream (as much as you like) over plums

  8. Serve it up while it's nice and steamy! (can be consumed when cooled also; however, the heat just adds to the warm fuzziness of the dessert - perfect for our cooler nights here down in the south of Australia!)

From the very start of this blog session, we've highlighted just how satisfying this dish is! It's not only delicious and intriguing but also incredibly wholesome for the whole family to enjoy.


I honestly can't imagine anything that could make this dish more irresistible than it already is! I have to say, I was pretty generous with the spices. These dishes are all about your personal taste and preferences, and they can be easily customized. It's all about creating something amazing with the best ingredients!


And when it comes to overnight glucose levels after indulging in this delightful creation...




Impressive! As you can see, there's a gradual incline, but levels still only reached slightly above 10, keeping them in range most of the time—exactly what we want!

Absolutely fantastic! We're constantly focused on general trends and overall times and levels to make improvements every single day. None of us are perfect, and that's perfectly okay because perfection is unattainable. Life is meant to be enjoyed! Working in a Palliative Care ward and providing end-of-life care (like I did last night!) truly makes one appreciate the incredible value of life. It reminds us of the importance of taking care of ourselves both physically and mentally, and most importantly, seizing every opportunity to experience joy while we can!
