Bacon and Broccoli Salad

This delicious dish was created when I sought a unique, diabetes-friendly salad for a BBQ at my sister-in-law's place for Easter a few years ago. Her partner absolutely loved it! While it's a salad, the bacon element is sure to win over the men. Simple yet effective, this salad is perfect for sharing at a party, or you can make a smaller portion as a side for a typical weekday meal, as I have done with this recipe. It can be effortlessly doubled or tripled!


Ingredients

2 cups broccoli florets

1/2 red onion (diced)

3 rashes of bacon (chopped)

1/3 cup whole egg mayonnaise

1/3 cup brown sugar

2 tea spoons vinegar


Method

  1. Cook onion, bacon and broccoli in oil on a saucepan on medium heat stirring often for 8-10 minutes until bacon in fragrant

  2. In a separate bowl mix brown sugar whole egg mayonnaise and vinegar together

  3. Add mixtures together

  4. Serve up!


    Conclusion


    This salad is an absolute star, whether you're hosting a lively party or simply enjoying a cozy midweek dinner at home. We've always been fans of whole egg mayonnaise because of its low sugar content. When my husband was in the hospital after his diagnosis, the dietitian recommended choosing products with around 3g of sugar per 100g. That advice really stuck with me, and whole egg mayonnaise is a perfect match, containing just 4g/100g. Now, about the bacon—while it's a fantastic low-carb choice, it's also a processed meat with sugars and preservatives, which isn't the best for overall health. But remember, as we've discussed, moderation is the key to enjoying all foods! This salad is not only delicious but also a breeze to prepare, making it a delightful side to any meal. Tonight, our main dish was a scrumptious chicken Kiev, and just look at that plate—filled with vibrant vegetables, potato gems, and, of course, the salad. It’s all about balance and enjoying everything in moderation!

Initially, the thought of combining bacon with broccoli was morally reprehensible… Until I discovered this recipe.  Not nearly the assault on the senses I expected. Quite delicious, in fact! Bravo.
