Creamy Peanut Butter Noodles (side dish)

Fantastic news! Just as I mentioned in an earlier blog about shirataki noodles from the Konjac region, I've embarked on trying a brand-new recipe. This time, I aimed to craft a simple yet mouthwatering dish using only the noodles and sauce, avoiding stir-fry or other mixtures. Peanut butter is a wonderful addition to this, being low in carbs, high in healthy fats, and packed with protein. Remember—moderation is key, everyone!


After a night of sugar levels skyrocketing like they were auditioning for a space program—thanks to some irresistible garlic bread—I figured it was time to reunite with our noodle buddies. They're just so darn tasty! Plus, there are endless noodle shenanigans to explore. Let's dive into another delicious way to slurp up this goodness...
Ingredients
1 x packet of Changs Wide noodles
3 tablespoons peanut butter
1/2 cup coconut cream ( alternatively coconut milk)
a sprinkle of ground ginger
2 tablespoons tomato paste
2 tablespoons minced garlic
2 tablespoons line juice
2 table spoons soy sauce
Method
Remove noodles from pack. Rinse under cold water
Add to of of boiling water and cook for no longer than 3 minutes (sometimes the noodles can become rubbery if left for too long!)
Place all other ingredients in a bowl and mix together
Place in a saucepan and cook on medium heat for 3-5 minute stirring frequently
Add noodles and cook for another 1-2 mins
Serve up on a plate with lots of other yummy veggies and meat of choice!
Conclusion
This is a brilliant addition to an already nutrient-packed meal! I was eager to try these noodles in something other than a stir-fry, which can be time-consuming. This creation, however, is incredibly quick and easy! You can add chicken and vegetables if you like, but even as a side dish, it's bursting with flavor and deliciousness. It fills you up without that heavy, bloated feeling—just pure satisfaction! The noodle texture is intriguing, with a slightly rubbery feel (so don't over-boil them!). It's a fantastic, healthier alternative that maintains quality. The meat portion was a chicken Kiev. Not the best but also not the worst! None of us are perfect, hey?
I'm always on the lookout for exciting new ways to improve things! A few nights ago blood glucose levels shot up to around 16 mmol overnight—not what we're aiming for at all! The culprit? Garlic bread! It's absolutely delicious and used to be a favorite before diabetes, but it's not something we indulge in often now, and here's why. It's so tasty that we just want more and more, which isn't great for blood glucose levels, and staying in range becomes a challenge! While HbA1c has been the gold standard for measuring outcomes, a 2025 study has explored the comparison between HbA1c and 'time in range' to evaluate their benefits and outcomes for patients with Type 2 diabetes. Given the swift advancements in diabetes technology and management knowledge, it is crucial to stay informed about the latest developments in the field to enhance outcomes. Nutrition remains a fundamental aspect of this, especially as we age and navigate a fast-paced, instant-gratification society. We must be conscientious about our dietary choices, not only for maintaining optimal HbA1c levels or 'time in range', but also for managing our weight, mental health, mood, and overall well-being and energy levels.
Ever since we revamped our diet, we've noticed big changes in our mood, energy, and sleep quality! It didn't happen instantly, but the difference was definitely noticeable... some things just have to change!

There are always a bunch of things to consider with diabetes, like how much insulin you take and how active you are. But if we develop good habits, we can get better trends with our algorithms, which means more time in range and improved HbA1c levels!

Delicious, but probably not the best choice for us! Here's why...

This real-life overnight snapshot of the CGM reading after indulging in too many carbs (mostly garlic bread) led to this unfortunate result! It happens... we're only human and shouldn't feel guilty. But if we can fix it the next night, then we're definitely on the right track! Feeling super inspired after the TOOL concert. These guys are in their 60s and still rock the stage like machines, so we can definitely look up to those who manage to find the right balance in every way :)
