Peanut Butter Choc Chip Cookies

Get ready to be excited because there are countless recipes for diabetes-friendly cookies, and I'm thrilled to share that I've finally found one that truly works and delivers delicious results! After experimenting with various methods, I've discovered some fantastic ingredients that nail both texture and taste while being perfect for diabetes. Rolled oats and almond flour are absolute game-changers, and let's not forget about peanut butter! I've mentioned before how it's a powerhouse for so many reasons when it comes to diabetes and diet.


Ingredients

1/2 cup of Rolled Oats

1/4 cup Almond Flour

1/2 cup Peanut Butter

3 tablespoons Vanilla Essence

1/4 cup brown sugar

1/4 -1/2 cup choc chips

Pinch of salt


Method

  1. Mix all ingredients together in a bowl and stir till mixture becomes dough like

  2. Pre heat oven to 170 degrees celsius

  3. On pre prepared oven trays covered with baking paper , spoon many tea spoons worth of dough onto tray. Feel free to squash this down with a fork! Also feel free to make this tea spoon a tablespoon ( depending on how big you want your cookies!)

  4. Place into oven for around 12 minutes

  5. Take out of oven and leave to cool

  6. Serve to family and friends!


    Conclusion

    Despite previous unsuccessful attempts at cookie making, these cookies turned out to be incredibly tasty! They strike the perfect balance with a little crunch and a little softness—truly the best of both worlds for cookies. They're sweet, but not overly so.

Sure, it might be a bit more expensive, but trust us, it's totally worth every penny!     This study highlights that lifestyle management and nutrition are truly the key pillars in managing glucose tolerance and its potential challenges. Remember, those small choices you make can lead to BIG differences!


  1. Another real life example of blood glucose levels and their management. These biscuits were consumed before and after dinner (which was spaghetti bolognaise). Maybe a bit too much insulin was taken on this occasion as glucose levels went a little too low for our liking requiring hypo management - juice and jellybeans. With stabilization - time in range was then achieved and continued. Despite the highs and lows of diabetes- we always try to make the best choices possible when it comes to food, ingredients and overall nutrition. We are only human of course and life needs to be enjoyed with naughty food and drink every now and then but if we can make the smaller choices every day then we are doing the best we can :)
