Mushrooms are an extraordinary vegetable with low carbohydrate content and a low glycemic index. However, we frequently consume them in uninspiring ways. Although they are delicious, it's time to explore and try something new and exciting!
Alright, let's dive into the wild world of dairy and its dance with diabetes, because it plays a starring role in this recipe. Now, we all know that keeping an eye on your diet and lifestyle is crucial for good health—especially if you're managing diabetes. And guess what? Dairy is on the guest list! You might think cheese is the villain in this story, but hold your horses—it's more like the misunderstood anti-hero. According to the Diabetes Council, cheese has a low glycemic index and is packed with protein—score one for cheese lovers! But wait, there's a plot twist: cheese is also high in sodium, which isn't exactly a heart's best friend. So, it's a mixed bag! The Diabetes Council also notes that the real troublemaker is HOW you eat the cream cheese. Is it on a bagel? In a cheesecake? Who can say? But neither is a winning choice for someone with diabetes. Ingredients
4 x large brown mushrooms
1 x cup grated mozzarella cheese
200g cream cheese
1/2 large brown onion (chopped)
3 garlic cloves (chopped into fine bits or minced)
Salt and Pepper (to taste)
1 tablespoons oil
Method
Cut off mushroom stems and chop into small pieces. Set aside.
In a fry pan on medium heat - add oil and onion. Cook for one minute.
Add mushroom stems and garlic. Cook for 3-4 minutes stirring frequently
Meanwhile Pre heat oven to 180 degrees celcius
Place cream cheese and mozzarella in the bowel together with salt and pepper
Mix thoroughly and add in onion/garlic/mushroom stem mixture
Place on top of mushroom ( as much as you like , I probably went a little too hard but that's ok!)
Place in oven for 15-20 minutes
Serve up - I would say mostly to Adults as the kids may not be keen but you never know!
Conclusion
This dish is an absolute winner! Unlike my last post, this creation is a breeze to whip up. The best part about this side dish is that it's incredibly tasty and filling, making it a perfect addition to just about anything - whatever flavor it happens to be! I’m all for loading up your plate with a variety of veggies (or something protein-packed like an egg) to help you feel fuller and possibly reduce the meat portion. We paired it with schnitzel, but thanks to the extra veggies, we didn’t need as much schnitzel to feel satisfied. Sometimes, it seems like nothing seems to satisfy but if we keep going and strive to make small, positive changes every day, what more can we ask for?
In all honesty husband DID question where these mushrooms came from and I assured him that I DID buy them from Woolworths. Truth!

But with a diabetes-friendly meal, it's one less decision to worry about, especially when we know it's wholesome all around! As you can see, there was a slight hypo after dinner with levels dipping just below the 4 mmol mark. With a quick fix of juice and a snack, everything was back on track. Levels spiked to 11 mmol around midnight, which is somewhat expected; however, just as we predicted, they smoothed out afterward and stayed within range - the ultimate goal!
So as the TOOL concert approaches, let's prepare to feel inspired, to fathom the power and witness the beauty to follow in our will and mind to create better choices for our future health and that of our children....spiral out!
