Super Special Fried Rice (low carb / guilt free style)

Inspired by the recent discovery of Konjac-style pastas, I confidently chose to incorporate konjac rice into a dish. This 'rice' seamlessly complements other diabetes-friendly ingredients, offering a satisfying staple without the heaviness and carb load of traditional rice. While tofu is an option, I opted for chicken to ensure it appeals to the entire family. This is yet another versatile, simple, and diabetes-friendly dish!




Ingredients

1 x packet Konjac Rice

500 grams chicken breast

2 Tablespoons oil

2 x carrots (chopped)

6 x button mushrooms (chopped)

1 x cup broccoli florets

4 x garlic cloves (chopped)

1 x brown onion (chopped)

Handful of green beans (chopped)

2 x eggs

1/4 cup soy sauce

salt and pepper to taste


Method

  1. Prepare chicken by marinading in soy sauce and oil and chill in fridge for a few hours (not really required but this is what I did!)

  2. Place chicken in oven on 180degrees celcius for 20-30 minutes

  3. Meanwhile drain fluid from rice pack and rinse rice under cold water for about a minute.

  4. Add rice to a pot of boiling water. Remove after 1-2 minutes ( this type of rice needs minimal boiling!). Drain and set aside.

  5. To a wok or saucepan add oil garlic onion and all other chopped veggies. Saute for 2-4 minutes or until it becomes fragrant.

  6. Make a well in the middle and add 2 x eggs. Scramble and mix in with vegetables

  7. Add sou sauce and cook for approx 3-4 minutes

  8. When chicken is done , remove from oven and cut into small pieces ( you could even shred it ) and add to vegetable/rice mixture. There isn't really any need for more cooking as such but I left on heat and stirred for a few extra minutes.

  9. Serve up with other fresh vegetables (or whatever you like)


Conclusion

Another winner! This dish was delicious and satisfying once more, and it won't leave you feeling bloated! Honestly, the rice tastes just like the 'bursties' you get with drinks at Hungry Jack's! They have a unique texture and flavor (though they don't have much flavor on their own, that's where we get creative!) and they are absolutely scrumptious!


This meal checks all the boxes, and my family couldn't resist going back for seconds! Even my 6-year-old commented that the broccoli tasted like old socks, but that's likely because I usually steam it every night. It was refreshing to have it prepared and enjoyed in a new way.


With these dishes and meals, I always make sure it's the WAY we enjoy them that counts! These simple ingredients are part of everyone's daily routine, and while they might not seem special at first glance, there's a twist! By embracing a diabetes-friendly mindset, it's those little tweaks (like using Konjac rice) that truly set them apart and make a world of difference!

Managing diabetes is like juggling flaming swords while riding a unicycle—there are tons of things to consider. But hey, if we can nail good nutrition, that's a win in our book!


Since none of us are perfect (and I'll be the first to admit it), we ended up having this after dinner...

Now, strawberries are already a superstar (especially since I just scored 8 kg of them on sale), so I figured, why not pamper ourselves with something that's kind of healthy and guaranteed to make the whole family do a happy dance? Even after this dessert extravaganza, glucose levels were as chill as a cucumber overnight!



It's all about the wild ride that lands us at 'time in range'—the place we want to keep our eyes glued to. Scoring a 74% over 7 days? I'm grinning like a kid with a cookie jar!


Wow! After diving into the book "Ikigai" (a fascinating Japanese concept about happiness, meaning, and purpose in life), I found myself bursting with inspiration, especially regarding food, diet, and eating habits. This book is absolutely captivating in SO many ways (I adore philosophy!), and when it comes to longevity, the Japanese truly have it nailed. It's not just about the food itself; it's all about HOW and WHY it's consumed. One crucial factor is eating fewer calories than our bodies demand and focusing on foods packed with nutritional value. It's a game-changer! The book talks about so much more than this though in terms of overall longevity, including eating enough just to make you feel full, movement in general, and RESILIENCE - a major one I'll talk about in future blogs! As I said, I could go on about this forever, but I won't...


In the meantime, always remember to keep going and make those tiny little changes if you can ... because they (and your health) matter!!!

One I will enjoy trying! I regularly ‘cheat’ with chicken stir fry’s and shred a roast chicken. Would this still be diabetes friendly?

This would be absolutely be a diabetes friendly option ! The crucial part is in the carb content hence using the Konjac rice instead of regular rice . Thanks for joining !!
