Peanut butter is a powerhouse of protein and healthy fats, all while being low in carbs. Plus, with its low glycemic index, it has a minimal impact on blood glucose levels (as long as you don't go overboard!).

While it might seem ordinary on toast, this delightful concoction is guaranteed to keep the kids smiling—just ask my 9-year-old!


Ingredients


1 cup rice bubbles

1/2 cup smooth peanut butter

1 tablespoon honey

Melting chocolate (as desired)


Method


  1. Mix together rice bubbles, peanut butter, and honey in a bowl.

  2. Create small balls (or a similar shape) with the mixture using hands and place on a plate. (You can make these any size - I like to make them bite-size!)

  3. Place in the freezer for 10 minutes.

  4. Melt the chocolate in the microwave.

  5. Take out the ball-shaped crackles and drizzle with chocolate. Alternatively, you can dip them in the chocolate!

  6. Place in the freezer for another 10 minutes.

  7. Serve up! (You can eat these almost straight out of the freezer, or maybe give it 5 minutes if you like.)
