Corned Beef Silverside (slow cooked)

This wintry dish is incredibly delicious, super easy to make, and a hit with everyone—even our 6-month-old devoured two bowls (puréed, of course!). The slow cooker is a lifesaver when you need to feed a large family and want to enjoy your evening without being stuck in the kitchen. Corned beef, though higher in saturated fat and sodium, fits perfectly into a balanced diet, as we always advocate on this blog! While it's relatively low in carbohydrates, paying attention to preparation and portion sizes is key. But flavor-wise, this dish is sure to impress. It's just perfect for us here in Australia as the mornings get chillier and chillier!
Ingredients
1.5 kgs Corned Beef Silverside
2 cups vinegar ( I have used malt and apple cider in previous attempts however regular vinegar seems to be just as good!)
1-2 cups of water
peppercorns (to taste)
salt and pepper to taste
Veggies ( carrots, eggplant, pumpkin, sweet potato - all chopped seem to work well )
WHITE SAUCE
3 tablespoons of flour
2 tablespoons of butter
1 cup of milk
Method for Corned Beef Silverside
Place all ingredients into the slow cooker and cook on LOW for 8-10 hours. I prefer 10 hours - the softer the better!
Serve with a plate of other goodies! As you can see there are a heaps of other vegetables on the plate - not just the ones from the slow cooker.
TIP - the meat could be potentially served on a bed of polenta however its SO tasty due to the infusion of vinegar that we often don't need anything else apart from the yummy white sauce.
Method for White Sauce
1. Add ingredients to saucepan and boil for 2 mins stirring constantly
Conclusion
Everyone can't resist going back for seconds of this meal because it's incredibly tasty! As noted, especially for those with diabetes, moderation is key, so it's crucial to be mindful of our choices and portion sizes. Its simplicity is part of its charm, and since it's always delicious, it has become a household favorite. The tenderness of the meat is a hit with both kids and adults alike!

Check out this screenshot! Post-meal hypoglycemic episodes were happening, but they were managed as needed. Just a heads-up: the time is displayed along the bottom, and glucose levels are on the right-hand side. Around 2000hrs or 8 pm, glucose levels were just above 4 mmol. Eight units of NovoRapid were taken before this meal, but since there were few carbohydrates in the meal and no dessert afterward, low glucose levels were expected.
