Tasty Pumpkin Soup

In the heart of winter here in the South of Australia, the weather is ideal for enjoying a hearty soup. Soup is always a hit, especially when it's delicious and warms both the tummy and the soul. My pumpkin soup varies each time I make it, but I've discovered that the secret to its sweetness lies in adding extra butternut and sweet potato, along with a hint of curry powder. While salt and pepper enhance the flavor, the kids have voiced their complaints about the pepper content—but to each their own!


Ingredients

1 leek (chopped)

2 cloves garlic (chopped)

2 tablespoons oil

1 small butternut pumpkin (1kg ish - chopped into cubes)

Cut piece of jap pumpkin (500 grams ish - chopped into cubes)

1 sweet potato (chopped)

1 potato (chopped)

3-5 cups of vegetable stock

2 tea spoons of curry powder

dash of salt and pepper (to taste)

Cream ( optional )


Method

  1. Add chopped leek and chopped garlic to oil in large pot

  2. Cook on high heat for 2-3 mins or until fragrant

  3. Add all other vegetables

  4. Cooks for 2-3 minutes while stirring occasionally

  5. Add stock

  6. Place lid on pot and boil for around 20 ish minutes

  7. Add to blender in portions and then back into the put or a bowl

  8. Serve up with cream and maybe some crusty bread and chips or whatever else you like!

Okay, so this snapshot isn't the best since glucose levels were already high before eating. After having some peanut butter cookies, it's not surprising that glucose levels went up two hours later. But hey, they stayed pretty steady instead of spiking suddenly. Eating carbs with the soup didn't really help, but we all have to enjoy life and make smart food choices. Being mindful about what we eat is always better than just eating anything without thinking!
